Recipe: Simple Vegan Dhal
This delicious, South-Asian-inspired curry is a satisfying meal that is easy to make on a budget.
This traditional, South-Asian dish, is a tasty, nutritious curry made up of lentils, tomatoes, chillies and spices. It takes less than an hour to cook, and is delicious served on a bed of fluffy basmati rice with a side of vegan naan bread.

Ingredients:
1 tbsp olive oil
2 cups red split lentils
1 onion chopped
5 garlic cloves crushed or thinly sliced
1 tbsp minced ginger
4 tsp turmeric
3 tsp cumin seeds
3 tsp garam masala
1 tsp curry powder
2 large tomatoes, diced
Salt and pepper to taste
Chopped cilantro leaves for garnish (optional)
Method:
First, rinse the lentils under running water. Add the lentils to a saucepan with five cups of water and cook for about 30 minutes or until the lentils are soft.
Meanwhile, heat the oil in a frying pan over medium heat, add the onion, and cook for five minutes or until the onion has softened.
Next, add the garlic and ginger and cook for a further two minutes.
Then, add the turmeric, cumin seeds, garam masala, and curry powder and mix into the onion, garlic and ginger. Let this cook for two minutes - remember to stir.
Add the diced tomatoes and fry for another two minutes.
Finally, drain the cooked lentils and add to the pan. Stir into the garlic, ginger, and spice mixture and allow to simmer for three minutes. Add salt and pepper to taste.
Serve with basmati rice and a vegan naan bread and garnish with chopped cilantro leaves.
