Ingredients:
1 cup (150g) self-raising flour
1 cup (225g) caster sugar
½ cup cocoa powder
1/2 tsp salt
1 cup & 2 tbsp plant-based milk
1 tsp vanilla extract
100ml vegetable oil
2 cups dark chocolate chips
½ cup chopped walnuts (optional)
Method:
Heat oven to 400F/200C/180C fan/gas 6, grease a medium-sized baking tray, and add greaseproof paper.
In a large mixing bowl, sift in the sugar, flour, cocoa powder, and salt.
Then, pour the plant-based milk, vanilla extract, and vegetable oil into a jug.
Next, carefully add the contents of the jug to the mixing bowl, and stir together the ingredients until you’ve created a smooth batter.
Stir in the chocolate chips.
Add the batter to the baking tray and spread evenly - if you like, you can sprinkle the optional walnuts on top.
Bake for about 25 minutes, leave to cool, cut into squares, and enjoy!
Tip: sprinkle a touch of icing sugar on top to give it that final finish!
