Recipe: Homemade Vegan Carrot Cake
The ideal recipe to keep you busy during self-isolation.
Choosing to eat vegan doesn’t mean giving up your favorite treats. This cruelty-free carrot cake is delicious, moist, and surprisingly easy! It doesn’t require any eggs or dairy, so you can satisfy your sweet tooth without harming any animals.

Ingredients:
Cake:
2¼ cups flour
2 cups grated carrots
½ cup coconut oil
1 cup plant-based milk (we prefer almond or hazelnut milk)
1 tablespoon vanilla essence
1 cup brown sugar
1 ½ tablespoons cinnamon
1 teaspoon nutmeg
1 ½ tablespoons baking powder
1 teaspoon baking soda
Pinch of salt
Frosting:
170g icing sugar
1/2 teaspoon vanilla essence
115g vegan margarine
A sprinkle of sunflower seeds
Method:
Heat oven to 200C/180C fan/gas 6 and grease a 9x13 baking pan.
Bowl one: whisk the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
Bowl two: whisk the plant-based milk, vanilla, sugar and oil.
Mix the ingredients from bowl one into bowl two.
Add the grated carrots and stir until just combined.
Bake for 30 to 40 minutes. Insert a knife to check that it comes out clean.
To make the frosting, stir the sugar and vanilla essence into the margarine until smooth.
When the cake has cooled down completely, spread the frosting and sprinkle the sunflower seeds on top.
