Recipe: Protein-Packed Vegan Burritos
This easy-to-make burrito is a healthy, delicious meal which will give you an added boost of protein.
If you’re looking for a simple, healthy, and filling dinner, these homemade vegan burritos will satisfy your cravings.
Ingredients:
2 tsp of olive oil
1 can or 425g of black beans, drained and rinsed
4-6 large tortillas (wholegrain tortillas are a great healthy option)
1 1/2 cups of cooked rice
1/2 cup of cooked sweetcorn
1/2 tsp of garlic powder
1 tsp of ground cumin
A sprinkle of chilli flakes (optional)
1 large mashed avacado (with an optional sprinkle of chilli flakes to give it an extra kick)
1 large tomato, sliced
1/2 cup of shredded lettuce
2 tsp of cilantro, finely sliced
Vegan cheese, shredded (optional - we love Daiya’s cheddar style shreds. Find them in a store near you using this tool)
Salt and pepper to taste
Method
Heat the oil in a large frying pan, then add the beans and spices (garlic, cumin, chilli flakes, salt and pepper) and stir to cook for around 4 minutes, or until the beans are hot.
Take one of the large tortillas and spoon some of the rice, black beans, sweetcorn, tomato, lettuce, avocado, cilantro, and optional vegan cheese in a line down the centre.
Fold the tortilla by wrapping the ends inwards and then rolling into a cylinder shape. Cover the burrito in foil.
In a frying pan, cook the burrito over a medium heat for about 5 minutes, remember to turn. Serve with tortilla chips and guacamole.
