Recipe: Raw Hummus “Sushi” Wraps

Ingredients:

For 6 rolls

  • 6 nori sheets

  • 3/4 cup hummus

  • 6 cups raw vegetables (cucumbers, carrots, peppers, asparagus, zuchinni - or whatever you fancy)

  • 1 1/2 avocado

  • 18 fresh lettuce leaves (hard stems removed)

  • 10.5g firm tofu

  • 6 tbsps sesame seeds

  • sriracha

Method 

  1. Slice the raw vegetable into thin sticks.

  2. Then, place the nori sheets on a rolling mat and spread a thin amount of hummus (to cover about 3-4 cm of the nori)

  3. Place the lettuce leaves (3 for each nori sheet) on the hummus. Then cover with the sliced vegetables and the pieces of tofu, making sure to spread it all evenly so it is easier to roll it.

  4. Place thinly sliced avocado on the veggies, sprinkle with sesame seeds and some sriracha.

  5. Roll the nori wraps tightly, watering the opposite 3 cm trim for it to stick (see the tutorial here).

  6. Cut the wrap into about 3 cm thick pieces.

  7. Serve with dipping sauce (we recommend 2 parts soy sauce with 1 part rice vinegar) and enjoy!
