Recipe: Easy Vegan Stir Fry with Tofu

This simple, vegan stir-fry is easy to make, packed with vegetables and bursting with flavor.

This delicious, Asian-inspired dish is an easy dinner recipe, perfect for those busy evenings when you want to whip something up quickly.

Ingredients:

Serves: 2 people

  • 2 tsp sesame oil

  • 2 tbsp olive oil

  • 125g tofu, chopped into ½ inch cubes

  • 2 red onions (173g), thinly sliced

  • 100g mushrooms, thinly sliced

  • 100g tenderstem broccoli, halved lengthwise

  • 100g baby sweetcorn, halved lengthwise

  • 1 red pepper, deseeded and thinly sliced

  • 1 large garlic clove, thinly sliced

  • 1 tbsp chopped ginger

  • 1 tbsp fresh green chilli, deseeded and thinly sliced

  • 1 tsp Chinese Five Spice 

  • 3 tbsp hoisin sauce

  •  1 tbsp soy sauce

Method:

  1. In a frying pan, heat the olive oil over medium heat and add the tofu. Cook for 4 to 6 minutes or until golden brown and lightly crispy. Remember to turn occasionally. 

  2. In a separate frying pan heat the sesame oil over medium heat, add the onions and cook for 5 minutes or until the onion has softened.

  3. Next, stir in the garlic, ginger, green chilli and Chinese Five Spice, and cook for a further 2 minutes.

  4. Add the vegetables to the pan and heat for 5 - 10 minutes until the vegetables have softened slightly.

  5. Add the fried tofu, hoisin sauce, and soy sauce and stir fry for another two minutes. 

  6. Serve with wholegrain rice and garnish with sesame seeds.
