Recipe: Easy Homemade Vegan Banana Bread

Baking is helping people to cope with self-isolation during the coronavirus pandemic. This vegan banana bread is easy to make and requires simple cupboard ingredients.

During these unsettling times, people around the world are turning to “stress” baking. And, as stores run low on certain foods, you may find yourself without many baking staples, so we’ve compiled a simple, homemade recipe for banana bread that is both cruelty-free and easy to make.


Ingredients:

  • 3 large bananas (preferably black)

  • 75ml vegetable oil

  • 100g brown sugar

  • 225g plain flour 

  • 3 heaped tsp baking powder

  • 3 tsp cinnamon

  • 50g dried nuts

Method:

  1. Heat oven to 200C/180C fan/gas 6. 

  2. Peel the three large bananas and mash them well with a fork. Then mix in 100g of brown sugar and 75g of vegetable oil.

  3. Next, add the baking powder, plain flour, cinnamon, and stir well. Then, sprinkle in the dried nuts.

  4. Oil a baking tin, and add the mixture. Bake for 40 minutes. Halfway through, check to see if the cake is going brown on top. If so, cover with some foil.

  5. When finished, allow it to cool for a little bit before slicing into squares and serving.
