Founded by Toni Okamoto, Plant-Based on a Budget is a website and meal plan that shows you how to make delicious, healthy, vegan recipes without breaking the bank. The resource currently features close to a thousand incredible recipes, from Pumpkin Pie Spice to Amazing Avocado Pesto.

Last week, Toni came on the Species Unite podcast to share with us her journey into plant-based eating and what inspired her to create Plant-Based on a Budget. And to kick off the Species Unite 30 Day Vegan Challenge, we’ve selected five of our favorite dishes by Plant-Based on a Budget for you to try.

Remember, if you haven’t signed up for the Vegan Challenge yet, there’s still plenty of time!
