Recipe: Easy Vegan Meatballs and Spaghetti

For the vegan meatballs:

With almost 25 percent of Americans now eating less meat, there is more choice than ever before when it comes to delicious, plant-based meat alternatives - and that includes meatballs. Below, we’ve listed some of our favorite vegan meatballs available at supermarkets across the U.S:

For the sauce:

  • 2 tbsp olive oil 

  • 1 onion, finely sliced

  • 2 garlic cloves, thinly sliced

  • ½ tsp of chilli flakes 

  • 2 tbsp of tomato paste (optional)

  • 2 x 400g cans chopped tomatoes 

  • ½ cup of fresh basil chopped

  • 1 tbsp dried oregano

  • Salt and pepper to taste

  • Spagetti pasta to serve 

Method:

  1. Heat the olive oil in a saucepan then add the onion and fry for five to ten minutes or until the onion has softened. 

  2. Add the garlic and chili flakes and fry for a further two minutes.

  3. Stir in the chopped tomatoes and optional tomato paste, then leave to simmer on a low heat for twenty minutes.

  4. Meanwhile, cook your chosen vegan meatballs according to the packet instructions. 

  5. When the sauce has simmered for twenty minutes, stir in the cooked vegan meatballs and serve with a pasta of your choice. Season to taste with salt and pepper.
