Recipe: Caramelized Onion and Sun-Dried Tomato Pasta

Ingredients
8 oz whole wheat rigatoni
1/2 yellow onion thinly sliced
1 tbsp minced garlic
6 oz sun-dried tomatoes
1-2 cups spinach
15 oz white beans
2 tbsp olive oil or vegan butter
1 heaping tbsp kosher salt for the pasta water
1/4 tsp paprika
Pinch of red pepper flakes
Black pepper to taste
1 tbsp capers
Juice from 1/2 lemon
Method
Salt the pasta water and boil pasta according to package instructions. It should take between 8-10 minutes.
Preheat a skillet or fry pan and add oil or vegan butter. Place the onions in the pan and caramelize over low/medium heat.
When the onions are brown, add the garlic and chopped sun-dried tomatoes.
Drain and rinse the beans and add them to the onion mixture. Incorporate spinach into the mixture and cook until wilted.
Stir in the paprika, red pepper flakes, black pepper, capers, and lemon juice. Season to taste!
