The range of plant-based food is continuing to soar in the U.S. as supermarkets and brands expand their offerings and add exciting new products to meet the rising consumer demand.

Retail giant Target has announced that it’s expanding its vegan range with new items including Falafel with Tzatziki Sauce, Crispy Chickenless Tenders, Spicy Black Bean Burger, and Meatless Crumble. The products are part of Target’s Good & Gather range and will be rolling out this month.

Meanwhile Walmart has just added vegan crab cakes and shrimp to over 400 stores. The plant-based seafood, by California-based Sophie’s Kitchen, is made from ingredients such as pea protein and konjac powder.

And now even Mickey Mouse is going plant-based: leading food producer Kellogg’s has teamed up with Disney to create Mickey Mouse Shaped Chik’n Nuggets. The ‘Incogmeato’ product is packed full of protein and contains 57 percent less fat and 35 percent less sodium than animal-based chicken nuggets, says Kellogg's.

"We saw a craving for more family-friendly plant-based options and as a mom myself I knew we had a big opportunity with Incogmeato," Sara Young, General Manager of Plant-Based Proteins at Kellogg Company told Plant Based News. "We are so delighted to be working with Disney to help land plant-based proteins on the plates of kids nationwide."

And finally, in a week packed with exciting plant-based food launches, vegan meat leader Beyond Meat has just expanded its delicious breakfast sausage to over 5,000 supermarkets nationwide, including Super Target, Walmart, Publix, Kroger, and Harris Teeter.
